Homemade Pasture Raised Chicken Noodle Soup
Nothing says fall or winter like homemade chicken noodle soup, made with pasture raised chicken. Forget the salty canned stuff and enjoy truly fresh soup!
2 1915 pasture raised chicken breasts
8 cups of pasture raised chicken broth - that I know you just made form our stock recipe! ;)
2-3 celery stalks
1-2 bag baby carrots
1/4 teaspoon thyme
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon pepper
2 Bay Leaves
1 cup Egg noodles
2 cup water- optional
Chop onion, celery, and baby carrots. Saute in a pan, then add to your pot along with your pasture raised chicken breast or chicken tenders. Add chicken stock along with all seasonings and let your chicken cook on low to medium heat for an hour. Once chicken is cooked (internal temperature of 160 F), take out of the pot and shred. Add back into the pot and add noodles (this would be the time for optional water). You can turn your stove top up to medium-high heat to let noodles cook. When your noodles are done it is time to enjoy!
