Pasture Raised Chicken Heart Skewers
Rhicken hearts are an easy and delicious way to sneak in the essential vitamins and minerals we need - rich in folate, iron, zinc, and selenium. It is also a great source B-complex vitamins. Our pasture raised chickens are raised outdoors on pasture on ample forage here on our local Texas farm, so rest easy all of our offal is as good and flavorful as it gets!
Prepare hearts by trimming away fat by cutting off the top 1/5th of the heart, and slicing down the center to fold open. Put in a bowl and rinse with water to remove any blood clots, and drain well.
To make marinade, combine 1/2 cup coconut aminos, (low sodium soy sauce can also be used), 1 TBSP minced garlic, 1 TSP sesame oil, 1 TSP ginger powder, and 1/2 TSP black pepper.
Whisk to combine ingredients.Pour marinade over hearts and set in the fridge for 30 min to 1 hr.
Place hearts on skewers and grill on high heat for 2 minutes per side. The key is a good sear, while being careful not to overcook them.
We served with some of our 1915 Farm steak kabobs and grilled peppers!
