Grassfed Barbacoa 

 2 lbs Beef Cheek Meat
2 tablespoons olive oil
½ white onion, chopped
2 garlic cloves
1 bay leaf
2 tablespoons kosher salt
1 quart beef stock or bone broth (can substitute water or chicken stock)

Place beef cheeks in a slow cooker. Add remaining ingredients. For slow cooker: Cook on low for 8 hours, or on low for 6 to 7 hours, or until beef cheek meat reaches an internal temperature of 160ºF and meat is tender..Strain liquid and shred beef cheek meat with a fork. Place your barbocoa on a corn tortilla and top with whatever you like
