Pasture Raised Chicken Alfredo

Using pasture raised chicken breasts makes the whole meal healthy right? Okay maybe not when it comes to chicken alfredo, BUT it does add extra flavor to an already delicious meal that can feed a crowd. Bring your favorite Italian restaurant to your own kitchen! I can't think of a better dish to splurge on! 80, 20 right? 

2 1915 pasture raised chicken breast
1 ½ sticks of butter
12 oz fettuccine
6 tablespoons minced garlic
2 cups heavy cream
½ cup sour cream
½ block cream cheese
1 cup parmesan cheese
Cayenne pepper
Salt and pepper to taste

Start by boiling fettuccine noodles. Season pasture raised chicken breast with cayenne pepper, salt and pepper on both sides. Heat a skillet with 2 tablespoons butter and garlic. Once the butter and garlic is browned, add your pasture raised chicken breast. Cook until internal temp of 160 degrees (about 4 minutes each side). Remove the pasture raised chicken breast and set aside. In the same skillet melt the remaining butter but don’t let it bubble. Then add the garlic, saute garlic for about 1 minute until fragrant. Slowly add your heavy cream and mix thoroughly. You can then add your sour cream and cream cheese. It will take time to thicken up. You can then salt and pepper to taste and add your parmesan cheese. If your mixture is too thick add a dash of whole milk till the desired consistency. Once your Alfredo sauce is made you can combine with noodles and cut pasture raised chicken over top and serve!
