Grassfed Roasted Tri Tip Steak Recipe

Cut from the bottom sirloin, the 1915 Farm Grassfed Tri Tip is a lean cut that's fantastic for grilling or roasting with simple seasoning. Simply seasoned with smoked paprika, ancho chili powder, and garlic...then reverse seared (roasted in oven then seared on the stovetop) to perfection!
INGREDIENTS

In a small mixing bowl, whisk together salt, pepper, ancho chili powder, smoked paprika and garlic powder. Rub spice mixture over entire tri tip coating every surface.

Let the steak come up to room temperature for 1 hour. Alternatively, cover and refrigerate up to 24 hours then bring up to room temperature for 1 hour.

Preheat oven to 350°

Place roast on an oven safe wire rack over a rimmed baking sheet.

Place tri tip into the oven until it is about 10 degrees shy of target temperature,** about 35 to 45 minutes (bake time will vary quite a bit based on thickness of roast and desired doneness).

When tri tip is close to done, preheat a cast iron skillet over medium-high heat on the stovetop for about 5 minutes.

Add 1 Tbsp avocado oil to the skillet.

Remove tri tip from the oven and sear the in the skillet until evenly browned all sides – about 4 to 6 minutes total (it should rise about 5 more degrees while searing). Medium-rare is recommended, 130 to 135°F. Steak will continue to cook slightly as it rests, so pull it a little early to ensure optimum doneness. 

Transfer steak to a cutting board and rest 10 minutes before slicing against the grain to serve. Enjoy!
