This recipe is one of our favorite ways to enjoy the ever-popular 1915 Farm Pasture Raised Ground Chicken. Also excellent with our heritage pasture raised ground pork these easy, delicious Asian inspired meatballs will become a family favorite. Don’t skip the sauce – it’s the perfect finishing touch and so easy to assemble, using most of the ingredients you already have out for the meatballs. Feel free to add additional toppings like white sesame seeds or freshly torn basil. Let’s get cooking!
Serves 4
INGREDIENTS
For the Meatballs
1/2 yellow onion, finely chopped
6 cloves garlic, minced or finely grated
2 tablespoons ginger, finely grated
1/2 teaspoon red pepper flakes
2 tablespoons soy sauce
4 tablespoons panko bread crumbs
1 lb. 1915 Pasture Raised Ground Chicken (or 1915 Pasture Raised Ground Pork)
4 tablespoons scallions, sliced (reserve an additional scallion for topping)
For the Rice
2 cups jasmine rice
3 cups water
2 tablespoons butter
Large pinch of coarse kosher salt or sea salt
For the Sauce
2 tablespoons soy sauce
2 teaspoons sesame oil
1 tablespoon rice wine vinegar
4 cloves garlic, minced or finely grated
2 tablespoons ginger, finely grated
2 tablespoons Sambal (chili garlic sauce). Sriracha works well here too!
INSTRUCTIONS
Preheat oven to 375° and line a large sheet pan with parchment paper. TIP: Crumbling the paper up into a ball, then spreading it out on the pan makes it less slippery and the edges won’t curl up constantly.
Combine all of the meatball ingredients in a large bowl and mix well. Form evenly sized meatballs and place on sheet pan. TIP: Use a cookie scoop to ensure consistent size for each ball. Bake for 12 minutes or until internal temp reads 165° (or 145° if using ground pork)

In the meantime, rinse the rice in a fine-mesh sieve or colander until the water is no longer cloudy. Combine rinsed rice, water, butter, and salt in a medium saucepan. Heat over medium-high until the mixture comes to a boil, then give it a stir, put the lid on, and reduce heat to the lowest setting for 15 minutes. Finally, leaving the lid on, turn off the heat and leave rice undisturbed for 10 minutes to finish.
To serve, fluff rice with a fork and portion into bowls. Place meatballs on top, spooning sauce over, and topping with sliced scallions. Serve extra sauce on the side.
