As of 12.23 - Most Texas and out of state orders placed now can ship the first week of January. However, for areas that are two UPS transit days from our farm AND where UPS does not deliver on Saturdays - we cannot ship those until January 6th. Those will ship out Monday January 6th. This is due to UPS being closed for the holidays - and adding extra transit days for certain areas. Pasture Raised Chicken Gyros Recipe with Lemon Garlic Dill Sauce

This Mediterranean-inspired dish has been in our regular rotation for years. A delicious, refreshing meal that highlights our pasture-raised chicken breast. Baked with lemon, fresh dill, and oregano, then diced up and piled high onto naan or pita bread. An easy, creamy yogurt sauce with garlic, lemon, and dill pulls it all together!  

INGREDIENTS

  • 1-2 Lb. 1915 Farm Pasture Raised Chicken Breasts
  • 1/2 yellow onion, sliced
  • 1 bunch fresh oregano, minced
  • 1 bunch fresh dill, minced
  • 1 cup whole milk green yogurt
  • 2 garlic cloves, minced or grated
  • Olive oil 
  • Kosher salt & freshly ground pepper
  • 2-3 lemons
  • Naan or pita bread, for serving
  • Baby arugula, for serving
  • Cucumber, diced for serving
  • Tomatoes, diced for serving (optional)

INSTRUCTIONS

For the Chicken —

Preheat oven to 400°

Place chicken breasts into a baking dish. Drizzle with olive oil and season both sides with a few large pinches of kosher salt & freshly cracked pepper.

Squeeze half a lemon over the chicken, then sprinkle with diced oregano and dill. The onion slices can be arranged around the chicken breasts or caramelized separately in a skillet.

Bake until internal temp reaches 165°, about 30 minutes depending on the size of chicken breasts.

For the Sauce —

Place yogurt into a small bowl, then add the juice of one lemon, about 2 tbsp minced dill, minced garlic, a drizzle of olive oil, and a large pinch of kosher salt. Stir to combine and chill in the fridge until ready to serve.

When chicken is done cooking, remove to a cutting board and let rest 10 minutes before dicing into cubes. Add chicken back to baking dish and mix with the juices. Cover dish with foil to keep warm while preparing to serve.

To Serve —

Briefly warm naan or pita bread in the now turned off oven, just for a few moments to soften it. Spoon a dollop of yogurt sauce in the middle of the naan, then add chicken, onion, cucumber, and tomatoes if using. Finish with a few leaves of baby arugula. Serve with extra lemon wedges on the side and enjoy!
