Our Pasture Raised Sage Chicken Sausage is herbaceous and savory with incredible sage flavor. It pairs beautifully with a bright yet decadent cream sauce, very similar to a classic alfredo. Rigatoni is the perfect noodle for this dish, but feel free to play with different shapes such as shells or even farfalle (bowties). Let's get cooking!
INGREDIENTS
- 1 lb. 1915 Farm Pasture Raised Sage Chicken Sausage
- 1 lb. Rigatoni
- 1 Tbsp kosher salt
- 1 cup heavy cream
- 1 stick salted butter
- 1/2 cup Parmigiano-Reggiano, freshly grated
- 1 lemon, for zest and juice
INSTRUCTIONS
Place a large pot of water over high heat. Add 1 Tbsp kosher salt and bring to a boil.
In the meantime, place a large skillet over medium heat, drizzle olive oil and let warm through. Add chicken sausage and cook through, breaking up into pieces using a flat edge wooden spoon as it cooks. Remove from heat, cover with a lid, and set aside.
In a small saucepan over medium-low heat, melt the butter. Then, slowly pour in the heavy cream, stirring constantly. Sprinkle in the grated Parmigiano, still stirring constantly. Continue to cook over medium heat until sauce has thickened enough to coat the back of a spoon. Remove from heat.
Finely grate about 2 tsp. of lemon zest, reserve for serving. Slice a thick wedge from the lemon and squeeze into the sauce, taking care not to let any seeds fall in.
Once rigatoni is cooked according to package directions, drain and add to the skillet with ground chicken, followed by the lemon cream sauce. Toss with tongs to evenly coat everything with sauce.
Plate in warmed pasta bowls and garnish with additional fresh grated Parm and the reserved lemon zest. Add red pepper flakes if you like a little spice. Enjoy!
