This hearty sweet potato bake brings together layers of tender roasted sweet potatoes, taco-seasoned grassfed ground beef, and a creamy, high-protein cilantro lime sauce that ties it all together. It’s wholesome, filling, and full of bright flavor – comfort food with a fresh twist. Great for meal prep, weeknight dinners, or feeding a hungry crew, this dish packs protein, nutrients, and satisfaction in every bite.
INGREDIENTS
For the High Protein Avocado Crema –
- 2 ripe avocados
- 1/3 cup plain Greek yogurt
- Dash of mayo, optional
- 1/3 cup fresh cilantro
- 2 limes, juiced
- 1 tbsp olive oil
- 3 garlic cloves
- 1 jalapeño, sliced, optional
- Salt & pepper
For the Sweet Potatoes –
- 2 large sweet potatoes, diced into small cubes
- 1 tbsp taco seasoning (see recipe below)
- Splash of olive oil
- Kosher salt
For the Ground Beef –
- 1 Lb. 1915 Farm Grassfed Ground Beef
- 2 tbsp taco seasoning (see recipe below)
- 1/2 cup beef or chicken broth (or water)
- 1 can of black beans, drained and rinsed
- 3/4 cup shredded cheddar cheese
- Fresh cilantro, for serving
For the Taco Seasoning – this will make a big batch
- 2 Tbsp Ancho Chile powder (not to be confused with chili powder, which is a blend of spices)
- 2 Tbsp smoked paprika
- 1 Tbsp cumin
- 2 tsp dried oregano
- 2 tsp garlic powder
- 1 tsp cayenne pepper, optional, more if you like it spicy
- 2 tsp kosher salt
INSTRUCTIONS
Preheat oven to 400°F.
Roast the Potatoes – to a baking sheet or dish, add cubed sweet potatoes, followed by a splash of olive oil. Toss to coat, then season generously with kosher salt and 1 Tbsp taco seasoning. Roast until golden and tender, about 25 minutes. Meanwhile, make the sauce and get the ground beef going.
Make the Sauce – combine all ingredients for sauce in a small blender, splashing in a little water to loosen and allow it to blend together easily. Taste and season with salt or more lime if needed.
Cook the Beef – place a skillet over medium heat. Once hot, add a splash of olive oil followed by the ground beef. Sear for a few minutes without moving, then break up into chunks. Season with kosher salt and about 2 tbsp of taco seasoning. Continue breaking up the beef until it's crumbled. Add the beef or chicken stock (or water), followed by the drained and rinsed black beans, and cover with a lid to simmer for 15 minutes, stirring occasionally. Meanwhile, preheat oven to 400°F
Bake – spoon the cooked ground beef over the roasted sweet potatoes. Top with shredded cheese, and bake for 15 minutes, or until cheese is melted.
To Serve – top with fresh cilantro and serve with the cilantro yogurt sauce, salsa, and lime wedges.
