Grassfed Sirloin Steak Sandwich with Whiskey Cream Sauce & Caramelized Onions

If you're in the mood for a seriously great sandwich, we've got you covered. This baby is loaded with juicy grassfed steak, a whiskey cream sauce, sweet caramelized onions, and a pop of peppery arugula. If you are subscribed to our Blissful for Boneless box, you probably have a sirloin steak in your freezer! If not, this recipe is great with our New York Strip, Ribeye, or Flat Iron. Let's get cooking!


Serves 2

INGREDIENTS

For the Steak –

  • 1915 Farm Grassfed Sirloin Steak, New York Strip, Ribeye, or Flat Iron
  • Kosher salt & coarsely ground black pepper
  • 1 Tbsp melted grassfed tallow or avocado oil 
  • 3 Tbsp butter
  • 5 sprigs of fresh thyme
  • 4 garlic cloves, peeled and lightly smashed

For the Caramelized Onions –

  • 1 large red onion, sliced into half moons
  • 2 tbsp extra-virgin olive oil
  • Kosher salt
  • 1/4 cup red wine (can use leftover)
  • 1 Tbsp Worcestershire sauce

For the Whiskey Cream Sauce – 

  • 1 small shallot, finely minced
  • 2 Tbsp whiskey (bourbon, cognac, or brandy also work great)
  • 3/4 cup beef broth (chicken broth works too)
  • 3/4 cup heavy cream
  • 1 tsp dijon mustard
  • Kosher salt & freshly cracked pepper

For the Sandwiches – 

  • 2 ciabatta sandwich rolls (usually found at your grocery store's bakery) 
  • 2 small handfuls of arugula 

INSTRUCTIONS

Remove steak from packaging and dry completely. Liberally season with kosher salt and coarse ground black pepper on both sides. Let sit at room temperature for about 30 minutes while you caramelize the onions.

For the Caramelized Onions – Place a skillet over medium heat, add olive oil followed by sliced red onions. Season with a few pinches of kosher salt. Sauté, stirring occasionally and reducing heat if onions are threatening to burn. When onions are very soft and caramelized, add red wine and cook down until evaporated. Add Worcestershire sauce and stir to combine. Place in a small bowl, covered, until ready to serve.

For the Steak – heat a large skillet over medium heat. Melt a knob of grassfed tallow or add a splash of avocado oil and let warm through. Carefully add steak and sear for 3-4 minutes until golden, then reduce heat to low and flip steak. Add cold butter, thyme sprigs, and smashed garlic cloves. Tilt pan to pool the melted butter and baste steak repeatedly. When steak has reached your desired internal temp, remove to a plate or cutting board to rest for 10 minutes. 

For the Whiskey Cream Sauce – in the skillet you cooked the steak in, add minced shallot and a pinch of kosher salt. Sauté for 1-2 minutes. Next, carefully add whiskey (*if cooking over a gas stovetop, you may wish to turn off the flame for this, in case any alcohol fumes cause a flare up – or embrace it and try your hand at a fancy cooking technique known as flambé).

Cook down until alcohol is evaporated and add broth. Stir and reduce the sauce until starting to thicken enough to coat the back of a spoon. Add heavy cream and further reduce until the sauce coats the back of a spoon again. Stir in the dijon mustard. Finish sauce with a few cracks of fresh pepper, taste and add a pinch of salt, if needed.

To Assemble Sandwiches – split ciabatta rolls and spread with softened butter. Place face down on a griddle or under a broiler for a few minutes to lightly toast.

Thinly slice the rested steak against the grain and sprinkle with flaky finishing salt, if desired. On the bottom half of the roll, spread a little whiskey cream sauce, followed by a small handful of arugula and half of the steak slices. Top with caramelized onions, more whiskey cream sauce, and the top half of the bun. Slice diagonally and devour!
