The 1915 Meatery is hiring a helper/packager in our brand new butcher shop! We are a whole animal craft butcher that brings in quarter beef carcasses and sides of pork of our own locally raised livestock to be further broken down into retail cuts - pork, steaks, etc of our grassfed and pasture raised livestock. The packager/cutter will be responsible for packaging and labeling meat, making simple cuts like stew meat and stir fry (can be more complicated cuts dependent on experience), using equipment to grind and make sausages, and eventually help operate the smoker for deli meats, hams, etc. This would be a great entry level position for someone that wants to work their way up and begin a career in butchery. Experience is welcome too! 

- Portion, package, and label meat into specific cuts according to head butcher's requests

- Cut, trim, and prepare meat for sale or consumption

- Use or comfortable learning to use various tools and equipment such as knives, saws, grinders, and slicers
- Maintain cleanliness and sanitation standards in the butcher area
- Adhere to food safety regulations, guidelines, SOP's and SSOPs

- must be able to lift heavy boxes / carcasses

 Experience 

- no experience required, but an eagerness to learn! 
- Willingness to learn or knowledge of different cuts of meat and their uses
- Familiarity with meat processing techniques and equipment is a bonus
- Ability to work in a fast-paced environment while maintaining attention to detail
- Strong physical stamina and dexterity to handle heavy cuts of meat
- willingness to learn knife skills and precision cutting abilities
