What a creative way to enjoy pasture raised ground chicken! These chicken bacon ranch burgers are super easy to prepare and incredibly tasty. A ranch packet is added to the ground chicken mixture, plus lots of fresh herbs, and a little panko breadcrumbs to help everything come together. To finish, these burgers are topped with melted cheese, crispy pasture raised bacon, and a creamy jalapeño ranch that will become your new favorite sauce. Let's get cooking!
Serves 4
INGREDIENTS
For the Burgers –
- 1 lb. 1915 Farm Pasture Raised Ground Chicken
- 8 strips of 1915 Farm Pasture Raised Bacon
- 1/4 cup green onion, green & white parts, thinly sliced
- 1/4 cup parsley, finely chopped
- 1/4 cup panko bread crumbs
- Kosher salt, to taste
- 1 ranch seasoning packet (I used 'Simply Organic' brand)
- 4 slices Monterey jack or white cheddar cheese
- Tomato, for topping
- Romaine or iceberg lettuce, for topping
- 4 Brioche buns, split, buttered, and toasted slightly
For the Jalapeño Ranch –
- 1 1/3 cups mayonnaise
- 1/3 cup buttermilk
- 1/3 cup chopped fresh jalapeño (I used red & green for a nice pop of color)
- 1/3 cup green chilis
- 1/3 cup cilantro, finely chopped
- 1 ranch seasoning packet
INSTRUCTIONS
In a medium bowl, add all ingredients for jalapeño ranch. Whisk to combine & chill until ready to use.
Preheat oven to 400° (for cooking the bacon).
In a medium bowl, add ground chicken, green onion, parsley, a pinch of kosher salt, and the ranch seasoning packet. Mix well to combine and place the bowl in the freezer for 15 minutes. This will make it easier to form patties.
Lay strips of bacon on a baking sheet, taking care not to overlap them. Bake for 15 minutes, or until crispy golden brown, before flipping the strips of bacon and continuing to bake 5-7 additional minutes. When done, remove bacon to a paper towel right away and keep warm until ready to serve.
Form four patties and place each one on a square of parchment paper for the best transfer to pan. Preheat a large skillet over medium heat, drizzle with avocado or olive oil, and cook 2 patties at a time (or all 4 depending on the size of your skillet). Cook, flipping occasionally, adding slices of cheese on top when close to done with an internal temp of 165°
Spoon a little jalapeño ranch on the bottom of the burger bun, placing a patty on top. Top with 2 pieces of bacon, broken in half, then drizzle with jalapeño ranch and top with other half of the bun. Promptly devour!
