A quick and healthy pasture raised chicken stir fry makes the best weeknight dinner! Serve over steamed jasmine rice or rice noodles.
- 1 lb. 1915 Farm Pasture Raised Chicken Breast, sliced into strips
- Olive oil or avocado oil
- 12 oz. frozen broccoli florets
- 12 oz. frozen stir fry vegetable mix
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 1/2 cup water chestnuts
- 1 can of baby corn
- 3 garlic cloves, minced
- 1/2 cup chicken broth
- 1/2 cup soy sauce
- 1 cup mushrooms, sliced
Preheat wok or large skillet over medium-high heat. Add 1 tablespoon of olive oil or avocado oil. Add sliced chicken breast to the wok. Sear without moving for 2-3 minutes until it releases from pan, and flip. Add bell pepper, mushrooms, garlic, and onion to pan. Continue to sauté for 5-7 minutes. Add broccoli, stir fry mix, baby corn, and water chestnuts. Sauté 4-5 minutes until veggies are almost tender and chicken is fully cooked.
Add chicken broth & soy sauce let simmer for 4-5 minutes. Serve over noodles or rice and enjoy!
