Golden, garlicky, and downright irresistible. These pasture raised chicken wings are tossed in a rich garlic butter sauce that coats every bite with savory flavor. Whether you’re serving them as a game day snack or a weekend treat, they’re simple, crave-worthy, and proof that the best wings start with the best chicken.
INGREDIENTS
- 1 Lb. 1915 Farm Pasture Raised Chicken Wings (feel free to double the recipe for more servings!)
- 1/2 Tbsp baking powder (make sure it's aluminum free, otherwise you'll have a metallic taste. Also be sure not to confuse this with baking soda ;)
- 1 tsp Kosher salt, plus more to taste
- 1/2 tsp white pepper (or freshly ground black pepper)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1-2 pinches of cayenne pepper, optional
- Avocado oil spray, for the pan
- 4 Tbsp good quality salted butter
- 2-3 garlic cloves, finely minced or grated
- 2 Tbsp fresh chives, finely minced
- Ranch or bleu cheese dressing, for serving
INSTRUCTIONS
Dry the wings very well so they crisp up in the oven. If you have time, dry the wings on a wire rack over a sheet pan overnight in the fridge.
Then, place the wings in a bowl. Add the baking powder, salt, white pepper, garlic powder, onion powder, smoked paprika, and cayenne. Toss the wings with the dry rub until they are well coated.
Line a sheet pan with parchment paper or foil for easy cleanup, then place a wire rack over top and spray lightly with avocado oil spray. Arrange the wings on the wire rack, with a bit of room between them so they don't steam.
Bake the wings for 20 minutes. Then, flip the wings and bake them for another 20-25 minutes until the wings are crispy on the outside and the internal temperature reaches 165°F at the thickest part. If you'd like, broil the wings for a few minutes to achieve maximize crispiness – just keep a CLOSE eye on them and don't push it too long, we don't want to dry 'em out.
Remove the wings from the oven and let them rest for about 5 minutes.
Melt butter in a small saucepan, add the minced garlic and swirl the pan until the garlic is fragrant, about a minute.
Place the cooked wings in a large bowl, pour the garlic butter over top and toss to coat. Transfer to a serving platter and garnish with fresh chives. Serve alongside ranch or bleu cheese (or both)!
