As of 12.23 - Most Texas and out of state orders placed now can ship the first week of January. However, for areas that are two UPS transit days from our farm AND where UPS does not deliver on Saturdays - we cannot ship those until January 6th. Those will ship out Monday January 6th. This is due to UPS being closed for the holidays - and adding extra transit days for certain areas. Pasture Raised Pork Lettuce Wraps Recipe

These Pasture Raised Pork Lettuce Wraps are light, flavorful, and super simple to prepare. A perfect way to enjoy our ground pork or ground chicken and they're ready in 15 minutes – talk about a perfect weeknight meal! Not only are these lettuce wraps packed with protein and low in carbs, did you know that pasture raised pork contains twice the amount of vitamin E compared to conventionally raised (confined) pork, and can provide 3x more vitamin D? Give this recipe a try and you'll find yourself making it again and again!

Serves 2-3

INGREDIENTS

  • 1 Lb. 1915 Farm Pasture Raised Ground Pork or Ground Chicken
  • 1 Tbsp sesame oil (olive oil or avocado oil works too, yet sesame adds such a great flavor)
  • Kosher salt & freshly ground black pepper
  • 1/2 small yellow onion, finely diced
  • 5 cloves garlic, finely minced or grated
  • 1 Tbsp freshly grated ginger
  • 1/4 cup hoisin sauce
  • 2 Tbsp soy sauce (we like Tamari, naturally brewed from non-GMO soy)
  • 1 Tbsp rice vinegar
  • 1 Tbsp sriracha, optional but recommended (doesn't make these particularly spicy but adds a nice acidity and flavor)
  • 2 scallions, thinly sliced at an angle
  • 1-2 heads of butter lettuce (iceberg works too)

INSTRUCTIONS

Place a skillet over medium heat. Once heated through, add sesame oil followed by ground pork or ground chicken. Season with a pinch of kosher salt & a few cracks of freshly ground pepper. Let sear for a few minutes without moving before breaking up meat with a wooden spoon. Once meat is nearly cooked through, just slightly pink, add onions and cook a few minutes until softened. Next, add garlic and ginger and cook until fragrant, 30 seconds. Then, add the hoisin sauce, soy sauce, rice vinegar, and sriracha, if using. Add half the sliced scallions, stir to combine, and let cook 2-3 more minutes, just to adhere the sauce to the meat. Cover and keep warm until ready to serve. 

Carefully separate leaves of butter lettuce (or iceberg) and lay 2 pieces per wrap flat on a serving platter. Spoon meat mixture amongst lettuce leaves, scattering sliced scallions over top, and additional sriracha if desired. Enjoy these like you would tacos, folding up the sides and promptly devouring!
