Craving a little nostalgic, comfort food? This cheesy delicious macaroni will take you back to the boxed dinners of your childhood but with much better ingredients from scratch, and packed with nutrient dense 1915 Farm Grassfed Ground Beef (this is also excellent with our ultra-popular Caveman Blend)!
Take the extra minute to freshly grate the cheddar cheese – it melts much better than the pre-shredded variety, as those are typically coated with anti-caking agents like potato starch, which inhibit optimal melting. Plus, it’s just way more delicious!
Serves 4-6
INGREDIENTS
- 1 Lb. 1915 Farm Grassfed Ground Beef
- 1 small yellow onion, finely chopped
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 2 tsp garlic powder
- ½ teaspoon cayenne powder (or just a pinch if you don’t like spicy)
- Kosher salt and fresh cracked pepper
- 1½ cups whole milk
- 1½ cups beef broth
- 2 cups elbow macaroni, uncooked
- 8 oz. tomato purée or passata
- 2 cups sharp cheddar cheese, grated
- Fresh parsley, minced, for serving
INSTRUCTIONS
Heat a large skillet or Dutch oven over medium heat with a splash of olive oil. Add the ground beef, a couple large pinches of salt, and sear without moving for a few moments before breaking up with a wooden spatula. Next, add the onion and sauté until soft.
Add the spices and stir well to combine. Once meat is browned, stir in the milk, broth, macaroni, and tomato purée. Add another couple of large pinches of salt, especially if the beef broth is unsalted.
Bring to a boil, cover and reduce heat to a simmer. Cook for 10-12 minutes or until pasta is tender. Stir often to prevent pasta from sticking to bottom of pan.
Stir in freshly grated cheddar cheese until melted. Serve with fresh parsley over top and dig in!
