Juicy, flavorful, and downright irresistible – these grassfed cheeseburger sliders are guaranteed to disappear fast. Made with perfectly seasoned grassfed beef (the addition of mustard to the beef gives it such a great flavor) melty cheese, sweet golden caramelized onions, and crunchy pickles, then served with a tangy, creamy burger sauce. Serve them up for a family-friendly dinner or add them to your game day spread. Either way, everyone will be reaching for seconds.
INGREDIENTS
For the Burger Sliders –
- 1 yellow onion, thinly sliced into half moons
- 1 tbsp olive oil or avocado oil
- 1 Lb. 1915 Farm Grassfed Ground Beef
- Kosher salt & freshly cracked pepper
- 2 tsp garlic powder
- 2 Tbsp yellow mustard
- 2 tsp Worcestershire sauce
- 1 package of Hawaiian rolls, sliced horizontally (keeping rolls intact)
- 1 cup shredded cheddar cheese (freshly grated melts best) OR cheddar slices
- Slicked dill pickles or candied jalapeños (or a combo of both)
- 1 Tbsp butter, melted in small bowl
- 1 tsp white sesame seeds
For the Burger Sauce –
- 1/2 cup mayonnaise
- 1 Tbsp ketchup
- 1 Tbsp yellow mustard
- 1 dill pickle spear, finely chopped (or use pickle relish)
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- pinch of cayenne pepper
- Splash of Worcestershire sauce
- kosher salt & freshly ground black pepper
INSTRUCTIONS
Place a large skillet over medium heat. Once pan is hot, add a splash of olive oil, followed by the sliced onions and a pinch or two of kosher salt. Sauté, stirring occasionally, until onions are caramelized (tip: keep a cup of water nearby and splash into the pan to deglaze it and encourage the caramelization process). Remove onions to a bowl and set aside.
Preheat oven to 350°F and prepare a baking pan that fits your Hawaiian rolls (I used a 10oz. package of Hawaiian sliders that fit perfectly in an 8x8 pan. If you have a 12oz. package, use a 9x13 baking dish).
To the same pan, add a tiny splash of oil followed by the ground beef. Cook without moving for about 5 minutes to get a nice sear and build flavor. Continue to cook, breaking up the meat into crumbles, and season with a few large pinches of kosher salt.
Next, add the garlic powder, yellow mustard, & Worcestershire sauce. Stir well to combine, cooking on low until meat is browned, tender, and cooked through. Remove from heat.
Place the bottom portion of Hawaiian rolls into baking dish. Spoon the entire ground beef mixture over the rolls, followed by caramelized onions, sliced pickles or jalapeños, and cover everything completely with shredded or sliced cheddar cheese. Place the top half of rolls and brush with melted butter, and sprinkle with white sesame seeds.
Cover pan with foil and bake for 10 minutes. Uncover and cook an additional 10-15 minutes until tops of rolls are golden brown and cheese is melted.
Meanwhile, combine all ingredients for the burger sauce. Taste and adjust seasoning as needed (I like to add lots of cracked black pepper) and chill until ready to serve.
Slice into burger sliders with a sharp knife, arrange on a serving platter if you'd like, and serve with burger sauce. Enjoy!
