Grassfed New York Strip Steak with Roasted Garlic Whipped Feta Recipe

This Grassfed New York Strip Steak with Roasted Garlic Whipped Feta is everything you want in a summer dinner – rich, flavorful, and just indulgent enough. The New York Strip is a classic cut, prized for its tenderness and bold, beefy flavor (ours is dry-aged for even more depth). It’s pan-seared to perfection, basted with butter, garlic, and thyme, and served atop a creamy, tangy whipped feta brightened with lemon and mellowed with roasted garlic. It’s a simple but elevated meal that feels right at home on a weeknight table or a weekend gathering. Let's get cooking!

INGREDIENTS

For the Steaks – 

For the Roasted Garlic Whipped Feta – 

  • 8 oz. feta cheese, (a block is best, but crumbled works too)
  • 5.3 oz. plain greek yogurt (this is the size of most single serve yogurt cups)
  • 1 head of garlic
  • 1 Tbsp lemon zest
  • 1 Tbsp lemon juice
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp fresh thyme leaves
  • Kosher salt, a pinch or two
  • Splash of milk, if needed to blend

To Serve – 

  • Roasted asparagus or potatoes
  • Roasted Garlic Whipped Feta
  • Flakey salt, such as Maldon, for finishing

INSTRUCTIONS

Season the Steaks – Remove steaks from packaging and pat dry. Season liberally with kosher salt and coarsely ground black pepper on both sides (don't forget the edges). Refrigerate for at least 60 minutes, up to overnight (uncovered). 

For the Roasted Garlic Whipped Feta – Preheat oven (or toaster oven) to 400°F. Slice 1/4 off the top of a head of garlic. Place it on a square of foil and drizzle with olive oil then sprinkle with flakey salt. Wrap it up tightly and place the cut side down into the oven for 60 minutes. 

In the meantime, place all ingredients for whipped feta into a small blender or food processor. Blend about 60 seconds, until very well combined and a nice whipped texture has been achieved (don't forget to use a splash of milk if needed  – or more olive oil.)

Transfer to a sealed container and refrigerate until ready to use.

Cook the Steaks – about 30 minutes before cooking, remove steaks from fridge and let sit on the counter to warm up a bit. Pat them dry with paper towels for the absolute best golden crust.

Preheat a large heavy skillet over medium-high heat. Once pan is heated through, add a small amount of tallow or cooking fat of choice. Once the fat is hot and shimmering, carefully add the steaks and sear without moving for about 4-5 minutes. 

Flip steaks and reduce heat to low (or off for a minute, before turning back on to low). Add cold butter, garlic cloves, and thyme sprigs to the pan. Tilt the pan to pool the melted butter and spoon the butter, garlic, and thyme over the steaks repeatedly for 3-4 minutes (or until desired internal temp is reached – we aim for 125–130°F for medium-rare). Remove steaks to a cutting board to rest 10 minutes.

To Serve – slice steaks against the grain, garnish with flaky salt. Plate with a swipe of whipped feta sauce on the plate, followed by slices of steak on top of the sauce, with asparagus or roasted potatoes on the side. Enjoy!

*Leftover whipped feta sauce will keep for up to a week. It's absolutely divine with pita chips, or on a breakfast sandwich with a fried egg, smashed avocado, and bacon.
