Grassfed Roast Beef Sandwiches with Caramelized Onions & Horseradish Aioli Recipe

When life is hard, sometimes a simple, satisfying sandwich is all you need for dinner. This one’s layered with tender grassfed roast beef, caramelized onions, and a tangy horseradish aioli — comforting, unfussy, and made to be enjoyed at the end of a long day.

INGREDIENTS

For the Horseradish Aioli – 

  • 1 cup mayo
  • 2 Tbsp prepared horseradish
  • 1-2 cloves garlic, finely minced or grated
  • 1 tsp lemon juice
  • Kosher salt to taste

For the Sandwiches – 

  • One package of 1915 Farm Grassfed Roast Beef
  • 1/2 a yellow onion, sliced and caramelized 
  • Splash of olive oil, for the onions
  • Kosher salt, to taste
  • Four ciabatta sandwich rolls, or your bread of choice
  • Four white cheddar slices, or your preferred cheese
  • Softened butter, for grilling sandwiches

INSTRUCTIONS

In a small bowl, combine the ingredients for the horseradish aioli. Chill until ready to use.

Heat a skillet over medium heat, once hot, add a splash of olive oil. Once that's heated through, add sliced onions followed by a pinch or two of kosher salt. Stir often, reducing heat as needed, until onions are caramelized. Remove to a small bowl until ready to assemble sandwiches. 

Slice ciabatta rolls in half lengthwise and spread each half with horseradish aioli. Layer roast beef slices, followed by caramelized onions, and a slice of cheese. Spread softened butter over each side of the assembled sandwich and grill on skillet until cheese is melty.

Allow to cool a few moments before slice in half and enjoying!
