Grassfed Steak Salad with Apples, Candied Pecans, & Maple Dijon Vinaigrette Recipe

*Make the candied pecans and vinaigrette up to a week in advance for an ultra fast weeknight dinner – simply season and cook the steak and assemble salads!

INGREDIENTS

For the Vinaigrette – 

  • 1/3 cup olive oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp maple syrup
  • 1 Tbsp dijon mustard
  • 2 cloves garlic, grated or minced finely
  • 1 Tbsp fresh chives, minced
  • 1 Tbsp freshly parsley, minced
  • Kosher salt to taste

For the Candied Pecans –

  • 2 Tbsp butter, melted
  • 1/4 cup dark brown sugar (regular brown sugar works too)
  • 3/4 cup pecan halves (or pieces)
  • 1/4 tsp cayenne pepper, optional
  • Pinch of kosher salt

For the Steak – 

To Assemble Salad – 

  • Spring Mix Lettuce 
  • 1 honeycrisp or other sweet/tart apple, very thinly sliced
  • Candied pecans
  • Parmigiano Reggiano shavings or crumbles
  • Thinly sliced steak


INSTRUCTIONS

For the Vinaigrette – combine all ingredients in a glass jar with lid and shake until well combined. Taste and season with salt & pepper to taste. Alternatively, place in a small blender or a large container and use an immersion blender for a smooth, creamy consistency (and no chopping necessary ;)

For the Candied Pecans – preheat oven to 350°F. In a medium bowl, melt butter, then stir in the dark brown sugar and cayenne, if using. Add pecans and stir to combine. Spread evenly on a parchment paper lined sheet pan and bake for 20 minutes. Let cool for 15 minutes to harden up before breaking nuts apart. If you're using pecan halves and prefer a finer texture, transfer cooled nuts to a large bag and smash lightly with a rolling pin. 

For the Steak – remove from packaging and pat to dry completely. Generously season all sides of each steak with grill seasoning. Heat a medium to large skillet over high heat. Once hot, add a touch of tallow, or avocado oil. Add the steaks to the pan and allow to sear without moving for several minutes. When the steak easily releases from the pan and has a beautiful deep golden color, flip gently using tongs (never pierce the steak with a fork during cooking). 

Reduce heat to low and add 3 tbsp cold butter and the thyme sprigs. Tilt the pan to one side, and using a spoon, baste the melted butter and herbs over the steaks repeatedly. Once steaks are about 5 degrees shy of your target temp (we shoot for 130°F for medium-rare), remove to a cutting and rest 10 minutes. 

Assemble Salad – while steak is resting, place spring mix lettuce into a large mixing bowl and drizzle with about half the vinaigrette. Toss with tongs to coat each leaf with dressing, then portion into low-rimmed salad bowls. To each bowl, add sliced apple, candied pecans, and parm shavings. Thinly slice steak against the grain and garnish with flaky finishing salt.

Place steak slices across each bowl, drizzling with additional vinaigrette before serving. Enjoy!
