Get game day ready with our Pasture Raised Buffalo Chicken Meatballs, a two-bite appetizer that packs a punch. Get all the flavor of your favorite buffalo chicken wing without the mess! Made with tender pasture raised ground chicken, these meatballs are coated in a zesty sauce made from Frank's Red Hot, butter, and a touch of honey for just a little sweetness. Perfectly portioned and full of bold, tangy heat, these meatballs are a crowd-pleasing addition to any party spread or tailgate. We serve them with a quick and easy ranch dipping sauce that leans heavily on a ranch seasoning packet but is jazzed up a bit with some additional herbs. Let's get cooking!
INGREDIENTS
For the Meatballs –
- 1915 Farm Pasture Raised Ground Chicken (pork would be great too)
- 1/4 cup panko crumbs
- Kosher salt & freshly ground pepper
- 1 tsp garlic
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 egg, beaten
- Scallions or chives, for garnish, optional
For the Sauce –
- 2/3 cups Frank's Red Hot Original
- 5 Tbsp butter
- 2 Tbsp honey
For the Ranch –
- 1 cup mayo
- 1/4 cup buttermilk
- 1 – 1.5 ranch dip packets
- 2 Tbsp fresh dill (or freeze dried)
- 1 Tbsp fresh or dried chives, optional
INSTRUCTIONS
For the Meatballs – to a large bowl, add all ingredients and mix to combine. Prepare a plate or sheet pan with parchment paper. Shape the chicken mixture into 10-12 small balls (I like to make them the perfect size for 2 small bites or 1 big one). Place formed meatballs on the plate or tray and refrigerate for 15-20 minutes.
Meanwhile, preheat the oven to 400°F
Make the Ranch – to a medium bowl, add all of the ingredients for the ranch and mix well to combine. Chill until ready to serve.
Make the Buffalo Sauce – to a small saucepan, add all the ingredients for the sauce and heat over medium until butter is melted and combined well. Keep warm until ready to use.
To Serve – dunk the meatballs in buffalo sauce before arranging them on a serving platter. Garnish the plate with scallions or chives, and serve with celery and carrot sticks, along with the ranch in a bowl for dipping!
