Creamy Orzo with Pasture Raised Pork Sausage & Hatch Chile Recipe

It’s Hatch chile season (late August–September), which also happens to be the season of craving quick yet delicious dinners! This Creamy Orzo with Pasture Raised Pork Sausage & Hatch Chile is a one-pan wonder that checks all the boxes: browned Italian sausage, sautéed onions, and roasted Hatch chiles cooked together with orzo, chicken broth, and a splash of cream. Plus, it only takes about 20 minutes! Finish it off with plenty of parmesan for that cheesy, silky texture everyone loves. Comforting, flavorful, and family-friendly (Hatch chiles bring flavor, not heat!) – everyone will want seconds!

INGREDIENTS

  • 1 Lb. 1915 Farm Pasture Raised Pork Italian Sausage
  • Splash of olive oil
  • 1/2 medium yellow onion, finely diced
  • 1 hatch chile, seeds and ribs removed, diced (or poblano if it's not hatch season)
  • Kosher salt & freshly ground pepper
  • 4 cloves of garlic, finely minced or grated
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream (or half n half)
  • 1/2 cup freshly grated parm or pecorino

INSTRUCTIONS

Heat a skillet or Dutch oven over medium heat. Once hot, add a splash of olive oil, followed by the sausage. Cook, breaking up the sausage with a wooden spoon until beginning to brown. Add diced onion and chile, season with a couple pinches of salt and a few cracks of pepper. In a cleared space in the pan, add the minced garlic and sauté until fragrant, just a minute or two. 

Add the orzo followed by chicken broth and heavy cream. Depending on the saltiness of your broth, add a few large pinches of salt (pasta needs salt ;). Stir well to combine and bring to a boil, stirring often. Reduce heat to low, cover with a lid, and let cook for 10-12 minutes, stirring a few times throughout, to ensure the orzo doesn't stick to the bottom. Once the orzo is cooked through, add grated parm and stir in.

Serve garnished with freshly grated parm and enjoy!
