Pasture Raised Italian Sausage Soup with Tortellini Recipe

The perfect intro to soup season! Our Pasture Raised Italian Sausage Soup with Tortellini is hearty, cozy, and exactly what we’re craving after a long, hot Texas summer. Juicy Italian sausage simmers with tender cheese tortellini, fresh basil, and a sprinkle of parmesan for a bowl that feels like fall — even if the weather hasn’t quite caught up yet. Comforting, flavorful, and easy...everything we want during this time of year!

INGREDIENTS

  • 1 Lb. 1915 Farm Pasture Raised Pork Italian Sausage or Chicken Italian Sausage
  • 1 yellow onion, diced
  • 3-4 celery stalks, diced
  • 2 carrots, diced
  • Kosher salt, to taste 
  • Freshly ground black pepper, to taste
  • 3-4 garlic cloves, finely minced or grated
  • 1-2 tsp dried Italian seasoning
  • 1 Tbsp tomato paste
  • 14 oz. can of crushed tomatoes (I frequently buy the 28oz. cans of Cento (I find they have the best crushed texture) and just freeze the other half in a container)
  • 2-3 cups Pasture Raised Chicken Bone Broth (depending on how 'soupy' you'd like it to be)
  • 10 oz. tortellini 
  • 1/4 cup heavy cream
  • Fresh basil, chopped (reserve some for garnish)
  • Parmigiano Reggiano or Pecorino, freshly grated 

INSTRUCTIONS

Place a large pot or Dutch oven over medium heat. Once hot, add a splash of olive oil followed by the Italian sausage. Break up the meat as it browns. Once it's crumbled and browned, remove to a bowl & set aside.

To the same pot, add diced onion, carrot, and celery followed by a couple large pinches of salt. Sauté the vegetables until beginning to soften a bit, then add garlic and cook until fragrant, about a minute. Add tomato paste, stir to combine. 

Next, add the crushed tomatoes & chicken broth. Increase heat to high. Once it comes to a boil, add tortellini & heavy cream, reduce heat to medium-low and cook for about 7-10 minutes, or until tortellini is al dente and the filling is hot (pull one out and cut in half to check).

Stir in the chopped basil. Divide amongst serving bowls and garnish with additional basil and freshly grated parm. Enjoy!
