Pasture Raised Bacon Wrapped Dates Stuffed with Goat Cheese Recipe

Sweet, chewy dates are filled with creamy, warmed goat cheese, wrapped in our pasture-raised bacon, and drizzled with a touch of honey. A sprinkle of fresh rosemary or thyme adds a festive, savory finish before theyโ€™re baked to golden perfection in just 25 minutes. Simple, elegant, and absolutely delicious!ย ย

INGREDIENTS

  • 1 lb. 1915 Farm Pasture Raised Bacon
  • 4 oz. goat cheese
  • 9 oz. Medjool dates
  • 2 freshย rosemary or thymeย sprigs, leaves stripped from stemsย & minced finely
  • Honey, just a drizzle
  • Rosemary sprigs and pomegranate seeds for garnish, optional
  • Toothpicks

INSTRUCTIONS

Preheat oven to 400ยฐFย 

Lineย a sheet tray with parchment paper. Place the goat cheese in a small bowl and microwave it for 10-15 seconds, just until warm enough to loosen it so it can be stirred into a smooth consistency.ย 

Using a small paring knife, cut a slit into each date,ย discardingย the pit.ย 

Remove bacon from its packaging and slice each strip into thirds.ย 

Using a small spoon, fill each date with goat cheese, press gently to close, cleaning up any excess goat cheese with the edge of your spoon, then wrap 1/3 piece of bacon, overlapping about halfway around. Secure with a toothpick (I prefer the edge of the bacon to face down on the pan, to create a better seal during baking).ย 

Once all dates are goat cheese stuffed and wrapped with bacon, lightly drizzle them with honey, and sprinkle with mincedย rosemary (or thyme).ย 

Transfer to the oven and bake for 20-25 minutes, until bacon is golden and crispy. Sometimes it helps to shift them around about 17 minutes into baking, as the bacon that's in contact with the pan will cook the fastest, so I tip them on their sides a bit just to get even browning.ย 

Let cool for 5-10 minutes (the inside will be quite hot for a bit). Arrange on a plate with rosemary sprigs and pomegranate seeds if using. Enjoy!
