Oven Baked Pasture Raised Pork Spare Ribs Recipe

Tender, meaty, and packed with flavor — these oven baked pork spare ribs are surprisingly easy to pull off, even on a weeknight. Coat them in a little mustard plus your favorite dry rub and let the seasoning work its magic with a little fridge time. Then, it's three hours of hands-off time in the oven then a bit of glazing at a higher temp until you achieve finger-licking perfection. Because who says ribs are only for the weekend?

Remove ribs from packaging and pat with paper towels to dry. Place ribs on a large sheet pan. Coat one side of ribs with mustard, brushing just a thin layer over every surface. Liberally season the ribs with dry rub. Allow to sit for 10 minutes to let seasoning adhere, then flip them over and coat the other side with mustard and seasoning. 

Transfer seasoned, uncovered ribs to the fridge for a few hours – up to 24 hours. 

Preheat oven to 300°F and prepare several large sheets of parchment paper. Wrap the ribs tightly in a package with the meat side facing up, and place back onto the large sheet tray. 

Bake the ribs for 3 hours before removing from parchment package (if there's a lot of liquid discard some so the ribs aren't sitting deep in juices). They should be quite tender but not falling apart, with the meat pulling away from the edge of the bones. Place some rib glaze or BBQ sauce in a bowl with basting brush.

Increase the oven temperature to 400° and brush the meat side of the ribs with sauce before returning them to the oven for 10 minutes. Baste again, and return to oven. 

Turn off the oven and turn on the broiler to high. One final baste then place under the broiler, keeping a very close eye on them. This last step really gets those sugars caramelized and the sauce nice and tacky. 

Remove from oven and let ribs rest 10 minutes before slicing between bones and enjoying with your favorite side dishes!
